Flavours, techniques and memories from different places come together with the products of our surroundings to create a cuisine that is personal, contemporary and full of identity.<\/p><p class=\"isSelectedEnd\">Our offering changes with the seasons and with what each moment has to offer. We cook with respect for the product, making the most of every ingredient and giving value to both small producers and the ingredients found closest to us.<\/p><p class=\"isSelectedEnd\"><strong>OUR MENUS<\/strong><\/p><p class=\"isSelectedEnd\"><strong>TASTING MENU<\/strong><\/p><p class=\"isSelectedEnd\">Our most complete proposal.<\/p><p class=\"isSelectedEnd\">A journey through HIU\u2019s cuisine, exploring different dishes, flavours and textures. A menu in which we explore our own approach to gastronomy, transforming the product through techniques such as fermentation, curing, marinating, ageing and our own preparations.<\/p><p class=\"isSelectedEnd\">The influence of Southeast Asia can be found in the flavours, techniques and ways of preserving and transforming ingredients, always in dialogue with the product and the territory around us.<\/p><p class=\"isSelectedEnd\">A living menu in constant evolution, shaped by the season, the produce available and our creative process. An experience designed to discover HIU through a personal, technical cuisine that is constantly evolving.<\/p><p class=\"isSelectedEnd\"><strong>CLASSIC MENU<\/strong><\/p><p class=\"isSelectedEnd\">The essence of HIU in a more direct and flexible proposal.<\/p><p class=\"isSelectedEnd\">The Classic Menu brings together a selection of our preparations and some of the dishes that best represent our way of cooking. A proposal for those who want to discover HIU\u2019s cuisine and enjoy a complete gastronomic experience, with a shorter journey than the Tasting Menu.<\/p><p class=\"isSelectedEnd\">The product remains at the heart of the experience, accompanied by flavours, techniques and preparations that are part of our identity. A cuisine that combines Mediterranean roots with the influence of Southeast Asia, always seeking a balance between tradition, technique and a contemporary perspective.<\/p><p class=\"isSelectedEnd\"><strong>HIU A MIGDIA<\/strong><\/p><p class=\"isSelectedEnd\">Our lunchtime proposal was created to bring HIU\u2019s cuisine into a more relaxed and agile format, designed to enjoy our way of cooking during the week.<\/p><p class=\"isSelectedEnd\">A \u20ac40 menu that remains true to our philosophy: seasonal and local produce, combined with flavours that bring together our perspective on the territory with the influence of Southeast Asia.<\/p><p class=\"isSelectedEnd\">The menu includes an appetiser, starter, a choice of fish or meat as a main course, and dessert.
